- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 cup butter, softened
- 1 cup light brown sugar
- 2/3 cup smooth peanut butter
- 2 tsp pure vanilla extract
- 2 large eggs
- 2 cups quick cooking oats
- 1 cup cocktail peanuts, roughly chopped
- 1 cup sweetened flaked coconut
- 12 oz chocolate chips

Preparation
Step 1
Preheat oven to 350 degrees. LIne baking sheet with parchment paper.
Sift together all purpose flour, baking powder, baking soda, and salt. Set aside.
In mixing bowl, cream together butter, brown sugar, white sugar, peanut butter and vanilla. Beat for 3 minutes until smooth, fluffy and light beige in color. Add eggs one at a time beating well after each addition. Mix until fully combined.
Add dry ingredients, gradually while beating on low spped, mixing well after each addition.
After all the dry ingredients have been added, increase speed of mixinger and beate for 1 minute. Using a spoon, add oats, peanuts and chocolate chips, and coconut. stir to combine...mixture will be thick.
Use a 4 oz ice cream scoop to place dough rounds on baking cheese. Flatten centers slightly.
Bake 16 - 18 minutes until lightly golden.
Cool on cookie sheet 5 minutes and remove to cooling rack to cool completely.
