Ingredients
- 2 bunches romaine lettuce
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- 1 1/2 tsp wine vinegar
- 3 1/2 Tbs olive oil
- 2 Tbs Parmesan cheese
- 1 oz anchovies, chopped
- 2 eggs
- 1 cup croutons
- salt & pepper to taste

Preparation
Step 1
1. Wash and dry Romaine. Sprinkle Salt and pepper in wooden Bowl. Rub entire surface of the bowl with cut garlic clove and discard. Add Mustard, Lemon Juice or Vinegar and mix till salt dissolves. Add Olive Oil and stir till well blended. Break Eggs into mixture and blend well. Chop anchovies and mix. Add torn Romaine and sprinkle with Cheese and Croutons. Toss and serve.
