Quinoa Stuffed Squash

Ingredients
- 4 small acorn squash cut in half
- 3 tbsp. oil
- 1 medium onion
- 2 cloves garlic
- 1 cup quinoa
- 2 tsp fresh thyme
- 1/2 cup dried cranberries
- crumbled feta

Preparation
Step 1
1. Rub squash with olive oil and salt and pepper. Arrange on baking sheet and cook for 25-30 minutes at 425
2. In a saucepan cook onion in oil for 7 minutes. Stir in garlic cook for 2 mins longer.
3. Add quinoa, toss to coat then add thyme, 2 cups of water. Simmer for 10 minutes. Stir in cranberries, simmer covered for 2 minutes
4. Fill squash sprinkle with cheese
