Ingredients
- Cake:
- 2 cups sugar
- 2 cups flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/4 tsp salt
- 3 cups raw, shredded carrots
- 1 cup cooking oil
- 4 eggs
- Cream cheese frosting:
- 1/2 stick butter
- 8 oz cream cheese
- 1 # powdered sugar
- 1 tsp vanilla

Preparation
Step 1
Cake:
1. Oven 350 degrees. Grease and flour 2 round pans, or 13x9 pan or bundt pan
2. Sift flour, sugar, baking soda, cinnamon, and salt, set aside.
3. Combine carrots, oil and eggs - mix well. Add flour and mix until well-combined.
4. Bake for 45"
Frosting:
1. Cream butter and cream cheese until fluffy.
2. Add powdered sugar about 1 cup at a time, blending well after each addition. Mix in vanilla and frost cake.
