Ingredients

  • 2 pkg Pilsbury Crescent Rolls, refrigerated
  • 8 slices bacon
  • 1 small red bell pepper, finely diced (1/2 cup)
  • 2 jalapeno peppers (seeds removed) and finely diced
  • 1/2-1 pkg cream cheese (4-8 oz), softened
  • 1 cup shredded cheddar cheese, divided
  • 1 cup corn chips, crushed (1/2 cup crushed), optional~I don't use these

Preparation

Step 1

Preheat oven to 425F. Place dough onto cutting board (do not unroll dough). Using sawing motion, slice dough into 24 disks. Place disks onto lg. bar pan; press to flatten and seal seams. Bake 11-13 min. or until golden brown.
Meanwhile, slice bacon into pieces; cook in skillet until crisp. Remove bacon and drain on paper towels. Drain pan, leaving 1 tsp. drippings. Finely dice bell pepper and jalapenos to pan; cook over medium heat 2-3 min. or until tender.
Combine cream cheese, half of cheddar cheese, bacon and pepper in bowl; mix well. Divide mixture evenly over crusts. Sprinkle with remaining cheese and crushed chips. Bake 4-6 min. or until cheese is melted and crusts are golden brown. Serve warm.
