- 1 1/2 lb fingerling potatoes
- 4 T olive oil
- 8 garlic cloves, sliced
- 1 T Italian parsley leaves, freshly chopped
- Salt and black pepper

Preheat oven to 350
In a large casserole dish, mix together the potatoes, oil, garlic, parsley, salt and pepper.
Roast for 20 minutes or until the potatoes are tender
