- 12 oz angel hair pasta
- 12 oz shrimp
- 1 red bell pepper, chopped
- 4 scallions, sliced (about 1/2 cup)
- 1 Peanut Butter Pasta Sauce (see recipe)

Preparation
Step 1
1. Cook Pasta. Cut chicken into bite size pieces and place in 3 quart bowl. Rinse and seed the red bell pepper and dice. Add to the bowl. Cut scallions into 1/4 inch slices, using whites and enough of the green part to make 1/2 cup. Add to the bowl. Stir to mix well. Set aside. Microwave 1 cup of the peanut butter sauce on high 1-2 minutes. Set aside. Drain the pasta and add to the bowl. Drizzle the sauce over the pasta. Toss well until the pasta is coated. Divide evenly among 4 plates. If desired, sprinkle with chopped peanuts.
This is served close to room temperature. Garlic bread and a green salad rounds out the meal. Very unusual and quite tasty. Good for a salad buffet type party.
