Ingredients
- 1 lb bacon
- 1 TBSP butter
- 1 red pepper, diced
- 1 green pepper, diced
- 2 cups fresh sliced mushrooms
- 4 cups frozen hash brown potatoes
- 1 tsp salt
- 1/4 tsp garlic salt
- 1/2 tsp ground black pepper
- 4 eggs
- 1 1/2 cup milk
- 1 pinch dried parsley
- 1 cup shredded cheddar cheese

Step 1
Preheat oven to 400 degrees. grease a 9 x 13 casserole dish.
In large frying pan, add butter, melt and add mushrooms. Cook until tender. Remove and set aside. Cook bacon, cool, and crumble.
Place potatoes in the bottom of prepared dish. sprinke with salt, garlic salt and pepper. Top with bacon, then red pepper, then green pepper, then mushrooms.
In large bowl, beat eggs with milk and parsley. Pour over casserole. Top with grated cheese. Cover and refrigerate overnight.
Remove from refrigerator while oven is preheating. Bake in preheated oven for 1 hour or until set.
If cooking from room temperature, cook for only 45 minutes.
