Orecchiette with Spinach and Goat Cheese

Ingredients
- 1 lb orecchiette
- 8 oz spinach
- 16 oz grape or cherry tomatoes
- 6 oz goat cheese
- 1 c. parmesan
- 1 tsp salt
- 3/4 tsp pepper
- PASTA WATER

Step 1
Boil the orecchiette in large pot of salted water until al dente. In the meantime roast the grape tomatoes, tossed with olive oil, salt and pepper at 400 for about 10 minutes and set aside. Put the spinach in a large bowl. When pasta is done, drain reserving at least a cup of pasta water. Top the spinach with the warm pasta adding a little pasta water. Toss to combine and wilt the spinach. Add the rest of the ingredients tossing gently. Add more pasta water if necessary.
