I used this recipe for a Christmas brunch in place of a coffee cake. It has just the right amount of sweetness.

Ingredients

  • 1 cup all purpose flour
  • 1 cup white sugar
  • 1/4 teaspoon salt
  • 2 cups fresh cranberries
  • 1/2 cup chopped walnuts, toasted
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract. (Recipe calls for almond extract instead)

Preparation

Step 1

1. Preheat oven to 350 degrees. Grease one 9 inch pie pan.
2. Combine flour, sugar, and salt. Stir in cranberries and walnuts and toss to coat. Stir in butter, beaten eggs, and extract. Spread batter in the prepared pan.
3. Bake at 350 degrees for 40 minutes or until wooden pick inserted near the center comes out clean.

The recipe says to serve warm, although I served it at room temperature. Also, it can be served with ice cream or whipped cream.
