Newfoundland Meat Stew
best made with moose meat or beef....if you can find salt pork, use it for a lot of extra flavor!!!

Ingredients
- 3 TBSP pork or vegetable oil
- small piece of salt pork
- 2 - 3 lbs meat (1 inch cubes)
- 1 large onion, chopped
- 2 celery stalks, chopped
- 3 TBSP all purpose flour
- 4 cups beef broth (or water)
- 4 large carrots, chopped
- 1 small turnip, chopped
- 8 medium potatoes, cubed
- salt and pepper to taste

Preparation
Step 1
In large dutch oven, over medium high heat, saute meat in pork fat until browned. Remove and set aside. Season with salt and pepper.
Lower heat to medium, add onion and celery and cook until onion becomes golden brown (about 5 minutes). Add flour and continue cooking over high heat until roux is slighly brown and bubblings (4 - 5 minutes)
Stir in broth and stir until liquid thickens. Return meat to pot and simmer 1 1/2 hours. Add carrots, turnip and simmer 15 minutes. Add potatoes and cook another 15 minutes or until vegetables are tender. Serve hot with homemade bread or rolls
