Ingredients
- 1 TBSP olive oil
- 1 pound ground turkey
- 1 yellow onion, chopped
- 1 - 2 stalks celery
- 2 green or colored peppers, chopped
- 1/2 tsp salt
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 TBSP chili powder
- 2 tsp chipotle chili powder
- 2 tsp cumin
- 1/2 tsp red pepper flakes
- 3 small sweet potatoes or 2 large, peeled and diced
- 1 cup uncooked quinoa
- 1 28 oz can crushed tomatoes
- 1 15 oz black beans, rinsed and drained
- 1 12 oz bottle beer (any dark or amber beer would work) or substitute with more chicken broth
- 1 - 2 cups low sodium chicken broth
- for serving ~ cilantro, avocado, shredded cheese, tortilla chips,sour cream or yogurt

Preparation
Step 1
Heat olive oil in a large skillet or dutch ovenover medium high heat; add turkey, onion, celery, garlic powder, salt and black pepper. Cook and stir until turkey is no longer pink.
Put cooked mixture into slow cooker. Stir in chili powder, chipotle chili powder, cumin, red pepper flakes, green peppers, sweet potatoes, quinoa, crushed tomatoes, beer, 2 cups chicken stock and black beans. Cover and cook on high for 3 - 4 hours or high 5 - 6 hours or until sweet potatoes are tender. Add more chicken stock if chili is too thick.
Serve hot with additional toppings.
