Ingredients

  • 2 large boneless, skinless chicken breasts
  • salt and pepper
  • 1/4 cup plus 1 tsp flour
  • 1 T butter
  • 2 tsp olive oil
  • 3 garlic cloves, minced
  • 1/4 c. shallots, finely chpd
  • 8 oz cremini mushrooms, sliced
  • 3 oz shitake mushrooms, sliced
  • 1/3 c. Marsala wine
  • 1/2 c. chicken broth
  • 2 T. parsley, chpd

Step 1

Slice the chicken breasts in half horizontally to make 4 cutlets. Pound lightly until about 1/4" thick. Season with salt and pepper. Dredge in 1/4 c. of flour, shaking off excess. In large skillet, heat 1/2 T butter and 1 tsp olive oil. Add chicken and cook until slightly golden on both sides, about 3 minutes per side. Set aside.

Heat remaining butter and olive oil and add garlic and shallots and cook until golden, about 2 minutes. Add mushrooms and season with salt and pepper, cook stirring occasionally until golden about 5 minutes. Sprinkle with 1 tsp flour and cook, stirring for about 30 seconds. Add the Marsala wine, chicken broth and parsley stirring and scraping up any browned bits until thickened, about 2 minutes.

Return the chicken to the skillet with the mushrooms and reduce heat to low and cover and simmer for about 4 -5 minutes.
