Ingredients

  • CRUST
  • 1/2 lb butter
  • 1 cup sifted flour
  • Dash Salt
  • 1/4 cup sugar
  • 1 egg yolk
  • FILLING
  • 2 1/2 lbs cream cheese
  • 1 3/4 cups sugar
  • 2 TBLSPs Flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 6 eggs
  • 1/2 cup heavy cream

Preparation

Step 1

CRUST
1) Place butter in a bowl. Add flour, salt, & sugar.
2) Blend together using one hand.
3) Add the egg yolk and continue mixing with the hand until well blended.
4) Wrap in wax paper & place in refrigerator for one hour.
5) Preheat oven to 400 degrees.
6) Roll out one third of the dough on a lightly floured surface, to form a 9 inch circle.
7) Place on the bottom of the 9 inch spring form pan.
8) Bake at 400 degrees for 10 minutes
9) Remove from oven. Butter the sides of the spring form and fasten it in place over the base. Roll the remaining dough in long strips to fit the sides and press into place, joining the bottom edges.
10) Preheat oven to 475 degrees. Prepare filling.

FILLING
1) Beat cheese with a rotary beater until light and fluffy, using electric mixer.
2) Add the sugar, flour, salt and vanilla gradually, beating well.
3) Add the eggs one at a time, beating well after each addition.
4) Add the cream and blend well. Pour into prepared pan.
5) Bake at 475 degrees for 10 minutes. At the end of 10 minutes, reduce oven to 225 degrees and bake 1 hour longer.
6) Turn off oven and open door. Let stand in oven 5 minutes.
7) Remove from oven carefully and allow to cool completely free of drafts. 2 to 3 hours to cool.
8) Remove spring from pan sides. Do not remove bottom.

If the middle jiggles after one hour, cook another 10 minutes until it no longer is jiggling.
