Ingredients
- OREGANO LEMON VINAIGRETTE:
- 2 medium sized cucumbers, sliced think
- 2 cups chopped tomatoes
- 2 cups baby arugula
- 1/2 red onion, cut into thin slices
- 1/2 cup olives, halved
- 1/3 cup crumbled feta cheese
- 1/3 cup chopped fresh parsley
- 1 TBSP fresh oregano
- 1/4 cup olive oil
- 3 TBSP fresh lemon juice
- 1/2 tsp dried oregano
- 1/2 tsp honey
- 1 clove minced garlic
- salt and pepper to taste

Step 1
Combine vinaigrette ingredients in a mason jar and shake to combine. refrigerate until ready to use.
Combine salad ingredients in a large bowl, add vinaigrette and toss to combine. serve immediately.
