Ingredients

  • 8 oz low fat cream cheese
  • 2/3 cup aged really good quality sharp cheddar cheese
  • 1/4 tsp cumin
  • 1/4 tsp smoked sweet paprika
  • Salt and pepper, to taste
  • 8 jalapenos, halved and seeds and ribs removed
  • 2/3 cup whole wheat panko
  • Olive oil in an oil atomizer

Preparation

Step 1

Preheat oven to 400 F degrees F and line a baking sheet with a silpat or parchment paper.
In a medium bowl, mash together the cream cheese, shredded cheese, cumin, paprika, and salt and pepper to taste. Pack into the jalapenos and sprinkle liberally with panko.
Spoon the filling into each jalapeño cavity. Then top each jalapeno with a spoonful of the Panko. Place on prepared baking sheet and give it a spritz with a little olive oil. Bake until crispy, about 15-20 minutes.
