Ingredients
- 1 (3 /12 - 4lb) Chicken
- 1/2 tsp kosher salt
- 1/4 tsp peppper
- 2 tbsp melted unsalted butter for basting
- FRENCH FLAVOR
- mash together 1 stick of unsalted butter (room temperature) 2 tbsp chopped fresh chives, 1 tbsp minced shallot, 2 tsp chopped fresh tarragon, 1 tsp kosher salt, 1/4 tsp pepper
- GREEK FLAVOR
- combine 2 tbsp olive oil, 1 tbsp minced garlic, 1 tbsp each chopped fresh oregano and fresh mint, 2 tsp each ground fennel and salt, 1/2 tap each ground cinnamon and fresh ground pepper

Step 1
Remove giblets, rinse chicken, pat dry with paper towel. Fold wings under back of chicken. Season it inside and out with salt and pepper. Let chill in fridge, uncovered for at least 30 min.
Mix one of the flavor combos.
Heat oven to 400F. loosen skin around breast. Spread flavor under skin. let chicken sit at room temp for 30 min.
Place a roasting pan in oven for 15 min, remove pan from oven, place chicken breast side up in hot pan. Brush with 1/2 tbsp melted butter. Roast 30 min, then lower oven to 375F. Roast another 45 to 55 min, basting every 15 min until meat registers 165F with a thermometer. Let rest 15 min before serving.
