5 stars - Oh, this is SOOOO yummy!I only had ¾ cup of Irish Whiskey, purchased on my first trip to Ireland in 2001. Since I only had the little tubes of instant coffee, that's what I used. I used a Colombian Roast which I believe is pretty strong. The tube had less than the required 2t. but that's all I used. I thought it had enough coffee flavor with the lesser amount. I had saved a smaller bottle of Baileys to fill, and even with the lower amount of Whiskey it made too much for the bottle and I "had" to drink about a juice glass that would not fit! Initial recipe said it made 60 ounces. Not a chance. 40 ounces max. - ME 1/2/2012

Ingredients

  • (Gift-Giving or for Yourself!)
  • 1 cup whiskey (inexpensive middle of the road is okay)
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup whipping cream
  • 4 eggs
  • 2 Tbs chocolate syrup
  • 2 tsp instant coffee granules
  • 2 tsp vanilla extract (Almond is also very nice)
  • Servings: 15
  • Yield: 40 ounces max.

  • I think I might eliminate the coffee crystals in the future, or at least decrease the amount. Not a fan of coffee.
  • From an Irish Cookbook: They call for 1 3/4 cup Whiskey, 2 cups of Whipping Cream and no eggs. Otherwise the ingredients and amounts remain the same. They also suggest substituting Coconut extract for the Almond extract.

Preparation

Step 1

1 tsp almond extract (Torani brand almond syrup is a wonderful replacement if you can find it in your area)

1. In blender, combine all ingredients; blend until smooth.

2. Store tightly covered in refrigerator up to one month. (It won't last that long!) Shake bottle well before serving, and return remaining liqueur to refrigerator.

3. Note: Use only Grade A, uncracked eggs.
