Preparation

Step 1

1. Cut 1/2 cup butter with 1 cup flour. Sprinkle 2 Tablespoons of water over it. Mix with fork and form into a round ball. Refrigerate till firm enough to work with. Divide in half on an ungreased cookie sheet. Pat each into a 12 x 3" strip and place the strips 3 inches apart.

2. In a medium saucepan heat 1/2 cup butter and 1 cup water to a rolling boil. Remove from heat, stir in almond extract and one cup flour. Return to heat and stir until it forms a ball (about 1 minute). Remove from heat, add three eggs and beat until smooth. Divide in half and spread over each strip of dough evenly. I will not flatten out, so be sure you smooth it nicely. Bake at 350 degrees F. for 55 minutes or until the top is crisp and golden. Allow to cool and frost with confectioners' glaze and sprinkle with sliced almonds. To keep the puff from sliding around on the serving tray, place a few daubs of icing on the tray.

3. Cut into 1 inch portions for 24 servings, You can make them smaller and get 32 units from the recipe for less calories!
