Ingredients

  • 1 1/2 C cornmeal
  • 1 C flour
  • 1 1/2 t baking powder
  • 1 t baking soda
  • 1 1/4 /t salt
  • 1/2 C corn meal
  • 1 1/2 C milk
  • 1 C sour cream
  • 1 stick butter
  • 3 T sugar
  • 2 eggs beaten

Preparation

Step 1

whisk dry ingredients. add milk to remaining 1/2 C cornmeal, Microwave for 1 1/2 minutes. whisk to remove clumps. repeat 30 second intervals (probably 2 times) until it thickens up. add sour cream, butter, and sugar and whisk together, until slightly cool then add eggs. Add dry to wet ingredients and mix well. add to greased muffin tin. Bake in 425 Deg. oven for 13-17 minutes.
cool for 5 minutes
