Freezer Breakfast Burritos
This makes about 6 burritos if you use the breakfast sammie leftovers.

Ingredients
- 2 medium potatoes - diced (hashbrowns??)
- 1 large red bell pepper
- 1 small red onion
- 1 tb veg oil
- 1 ts salt
- 12 large eggs
- 1/4 c whole milk
- 2 T butter
- 1 1/2 c jack cheese
- 12 tortillas

Preparation
Step 1
Heat oven to 400.
Toss vegs in oil and salt and layer on baking sheet. Bake about 20 minutes or until tender.
Whisk eggs and salt. Melt butter in a pan. Add the eggs and cook; stirring occasionally, until mostly set but still moist - 4-5 minutes. Remove from heat.
Assemble: Let eggs and vegs cool. Place tortialla on foil, 2 TB cheese, 1/4 c vegs, 2T eggs, any other toppings.
Fold sides then roll from the bottom up. Wrap in foil and freeze.
To reheat: Microwave on high 1-2 minutes or heat in oven 350 degrees 12-15 minutes.
