Ingredients

  • 1 1/2 cups thawed hash brown potatoes
  • 3/4 cup shredded cheese (extra old, pepper jack, jalapeno)
  • 1 cup diced ham
  • 1/4 cup green peppers
  • 4 eggs, beaten
  • 1 12oz can evaporated milk
  • 1/4 tsp fresh ground black pepper
  • 1/8 tsp salt

Preparation

Step 1

Preheat oven to 350 degrees. Grease a 2 qut baking dish or 8x8 square pan.

Sprinkle hash browns evenly in bottom of dish, then sprinkle with ham, green peppers, and cheese.

In separate bowl, whisk eggs, milk, salt and pepper. Gently pour over potato mixture in pan. At this point you can cover and refrigerate overnight or bake it right away.

Bake for 40 - 45 minutes or until eggs are set and cooked through in center. Serve hot.
