Grilled Potatoes with Blue Cheese Dressing 0 Picture

Ingredients

  • 2 1/2 lbs small red potatoes
  • 2 TBSP olive oil
  • 1 TBSP kosher salt
  • 1/2 cup sour cream
  • 1/2 cup crumbled blue cheese
  • 1/3 cup buttermilk
  • salt and pepper to taste
  • green onions / parsley for garnish

Preparation

Step 1

Cook potatoes in simmering water until just tender, about 20 minutes.

Drain and pat dry, toss with olive oil and 1 TBSP salt. Grill pototoes over medium high heat turning often, until golden and crisp, about 10 minutes.

Whisk sour cream, blue cheese, buttermilk, season with salt and pepper.

Transfer crispy potaotes to a platter or bowl, drizzle with sauce and garnish with green onions or fresh parsley.

Serve hot and with additional blue cheese dressing.
