Ingredients
- 2 chicken breasts
- 1 16oz Honey BBQ Ranch Dressing
- 1 bell pepper
- 1 1/2 c cooked corn
- 2 T veg oil
- 1/2 c onion
- 1 1/2 c rice (not minute)
- 1 tsp cumin
- 3 c chicken broth
- 1 can black beans washed and drained

Preparation
Step 1
Add oil to saucepan. Add onion and rice and saute, stirring frequently for 3-5 minutes or until rice beings to get golden brown. Add cumin, chicken broth, black beans. Brink to boil, reduce to low, cover and simmer 10 minutes. Remove from heat and allow to rest for 5 minutes. Remove lid and fluff gently with a fork. Set aside.
Place chicken in dish and baste with 1 c dressing. Refrigerate for 20 minutes.
Grill peppers and corn
Grill chicken until cooked thru. Remove from heat and rest 5 minutes.
Spook rice into bowls, topped with veggies and chicken. Drizzle dressing on top.
