- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 3/4 cups milk
- 1 cup grated sharp cheddar cheese
- 1/2 tsp. dry mustard
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper

Step 1
In 2 qt. saucepan, melt butter over med. heat. Add flour, whisk until well blended. Cook 1 min., whisking constantly. Add milk all at once; whisk until smooth. Bring to a simmer, stirring constantly until thickened. Cook an additional 10 min, stirring occasionally.
Remove from heat. Add cheese, mustard, salt and cayenne pepper; whisk until smooth.
