I recommend cooking the mushrooms separately, otherwise the water from the mushrooms makes the curry too watery.

Ingredients

  • For Masala
  • oil - 1 tsp
  • onion - 1/2 cup - chopped
  • tomatoes - 1 1/4 cup - chopped
  • ginger - a small piece
  • garlic - 5 cloves
  • chili powder - 1/2 tsp
  • salt - to taste
  • sugar - 1/2 tsp
  • For Curry
  • oil - 2 tsp
  • onion - 3/4 cup - sliced
  • mushrooms - 2.5 cups - sliced
  • cauliflower - 1.5 cups - roughly (cut into florets)
  • spring onion - to garnish

Preparation

Step 1

For Masala
Heat oil and saute onions, tomatoes, ginger and garlic for 5 minutes. Allow to cool and blend with salt, sugar and chili powder.

For Curry
Heat oil and saute onions until they are cooked. Next add the mushrooms and cauliflower and saute for 10 minutes. Add the masala and simmer for 10 - 15 minutes until the curry reaches the desired consistency. Serve with rotis, or rice, or quinoa, or eat plain!
