Transform a jar of marinated artichoke hearts into a quick spread for crostini. Though homemade is easy to make, this appetizer is even quicker to prepare using a ready-made artichoke spread available in many specialty food stores.

Ingredients

  • 1 jar (6.5 ounces) marinated artichoke hearts, drained and coarsely chopped
  • 1 cup finely shredded Parmesan cheese (divided)
  • 2 tablespoons finely chopped white onion
  • 1 garlic clove, minced
  • 2 teaspoons chopped Italian parsley
  • 1 baguette
  • 2 tablespoons extra-virgin olive oil

Preparation

Step 1

In a mixing bowl, combine artichoke hearts, ¼ cup Parmesan, onion, garlic and parsley. Store, covered, in refrigerator. (Can be prepared one day ahead.)

Preheat broiler to high. Line a baking sheet pan with aluminum foil.

Cut baguette into 16 slices, cutting on a slight diagonal. Place on prepared pan. Brush tops with olive oil. Lightly toast under broiler 1 minute. Spread artichoke mixture on top of each crostini. Sprinkle tops with remaining Parmesan. Broil until lightly browned, about 2 minutes.
