Ingredients
- 1 1/2 lb boneless skinless chicken breast, cut in half
- 1/2 tsp salt, divided
- 1/8 tsp black pepper
- 1 small onion, finely chopped
- 2 carrots, chopped
- 2 cups dry coleslaw mix
- 4 cups low sodium chicken broth
- 1 15oz can white beans, drained and rinsed
- 1 14oz can stewed tomatoes, not drained, chopped
- 1 cup frozen peas
- 1/2 tsp fresh thyme
- 1 bay leaf

Preparation
Step 1
evenly season chicken with 1/4 tsp salt and pepper. Place all ingredients, except 1/4 tsp salt, in the crock pot and stir. Cover and cook on high 3-4 hours or low 7-8 hours.
Remove and discard bay leaf. Remove chicken and shred with 2 forks. return to crock pot and stir.
Season with remaining 1/4 tsp salt.
