Ingredients
- 1 lb hot italian sausage
- 1/2 cup chopped onion
- 3 cups beef broth
- 1 14 oz can italian style tomatoes, chopped
- 1 cup thinly sliced carrots
- 1 tsp basil
- 1 TBSP fresh parsley
- 2 cloves minced garlic
- 1/8 tsp pepper
- 1 cup sliced zucchini
- 1 cup rotini
- 1/4 cup parmesan cheese

Preparation
Step 1
cook italian sausage and onion until sausage is no longer pink and onion is tender. Stir in beef broth, undrained tomatoes, carrots, basil, parsley, garlic and pepper. Bring to boil, reduce heat and cover and simmer 10 minutes. Stir in zucchini and rotini. Bring to boil, stir, reduce heat and cook until pasta is cooked. 10 - 15 minutes. sprinkle each serving with cheese.
