Ingredients

  • 1 - 2 turkey sausages
  • 1 onion, chopped
  • 1 small potato, peeled ad finely chopped
  • 1 stalk of celery, chopped
  • 1 clove garlic, minced
  • 2 TBSP olive oil
  • 3 cans low sodim chicken broth
  • 1 can cannellini beans (15 oz) rinsed and drained
  • 1 can 14 oz italian stewed tomatoes, undrained and chopped
  • 1/4 cup minced fresh parsley
  • 1 TBSP prepared pesto
  • 1/4 cup uncooked orzo
  • 1 cup fresh baby spinach
  • 1/4 cup grated parmesan cheese

Preparation

Step 1

In a dutch overn, cook sausage, onion, potato, celery and garlic in oil until tender.

Stir in broth, beans, tomatoes, parsley, and pesto. Bring to a boil. Stir in orzo, reduce heat , cover and simmer for 10 - 15 minutes until pasta is tender.

Add spinach and cook until wilted.

Sprinkle cheese on each serving bowl of soup.
