Ingredients
- 1 lb fresh linguine
- 2 TBSP olive oil
- 2 large eggs, lightly beaten
- 1/2 tsp crushed red pepper flakes
- 1 zucchini, cut in half and cut into half circles
- 8 oz mushrooms, chopped
- 1 clove garlic, minced
- 2 TBSP brown sugar
- 1/3 cup low sodium soy sauce
- 1 TBSP sriracha sauce
- 2 inches fresh ginger, grated
- juice of 1 lime
- 2 - 3 TBSP creamy peanut butter, melted
- 1 handful or fresh cilantro or basil
- 4 green onions
- 1/4 cup peanuts
- ADD chopped chicken and / or shrimps to make a complete meal. Add when you toss the noodles and sauce.

Preparation
Step 1
In a bowl, combine brown sugar, soy sauce, sriracha, ginger, lime juice and peanut butter. Whisk to combine and set aside.
Cook noodles, al dente, set aside.
In a large stock pot, add 1 TBSP oil and saute zucchini, mushrooms, and garlic. Saute over medium high heat until veggies are cooked. Push vegetables to outside of pan....add 1 TBSP of olive oil to center of pan, add eggs and red pepper flakes and stir to scramble eggs. Once cooked, stir into the vegetables.
Add cooked noodles to vegetable mixture, stir in sauce until well combined. Remove from heat and add herbs, green onions and peanuts.
Serve immediately! Serve with additional peanuts and cilantro.
