Ingredients

  • 9 oz/250 g plain flour
  • 2/3 /4oz/80g icing sugar
  • 2 egg yolks
  • 1 vanilla pod,
  • 1 pinch of salt
  • 5 oz/150 g grated almonds
  • 5 oz/150 g butter
  • Icing sugar and vanilla to dust

Preparation

Step 1

Put the flour in a bowl. Create a well in the middle and add the icing sugar, egg yolks and salt. Slice the vanilla pod, remove the seeds, and add along with the almonds. Knead, then rest the dough for an hour in a cool place. Make a roll about 2in/5cm in diameter, cover in plastic wrap, then refridgerate for 12 hours. Preheat the oven to 350F/180C. Cut roll into slices and create crescent shapes. Place on a baking tray and bake for about 10 minutes. Dust the biscuits with icing sugar and vanilla while warm.
