Ingredients
- 2.5 cups all purpose flour
- 2 t. baking soda
- 1 t. kosher salt
- 1 t. ground star anise
- 1 t. ground ginger
- 1 t. ground cinnaomon
- 1/4 cup butter, room temp.
- 1/2 cup Crisco
- 1 C dark brown sugar, packed
- 1 large egg
- 1/2 C dark molasses
- 1/3 C diced crystallized ginger
- 1/3 C coarse or sanding sugar

Step 1
In a small bowl, whisk together the flour, baking soda, salt, anise, ginger and cinnamon. In the mixer bowl with paddle attachment, combine butter and Crisco and brown sugar. Cream on medium for 2 minutes, scraping down the sides and bottom with a spatula. Add egg and molasses, mixing until well combined.
With mixer on low speed add, dry ingredients, Mix in crystallized ginger. Cover and refrigerate for 1-2 hours.
Preheat oven to 350F. Line baking sheets with parchment. Scoop dough with a 3/4 oz. scoop (4.5 t.). rolling each ball of dough in coarse sugar. Place dough on sheets. Bake 9-11 mins until edges are set and centers begin to crack. Centers will look slightly under baked but will firm up. Cool on cookie sheets 5 mins before removing.
