Ingredients

  • TOPPING:
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 egg
  • 1/4 cup butter or margarine, melted
  • 1 tsp orange zest
  • 1/3 cup orange juice
  • 2 tblsp butter or margarine
  • 2 tblsp sugar
  • 1/4 cup all-purpose flour
  • 1 tsp orange zest

Preparation

Step 1

Preheat oven to 400 degrees.

Grease a loaf pan thoroughly.

Combine flour, sugar, baking powder, baking soda and salt in a mixing bowl.

Mash bananas in a bowl. Add egg, melted butter, orange juice and orange zest; mix well.

Add banana mixture to dry ingredients; mix just until dry ingredients are moistened.

Pour into prepared pan.

For TOPPING, combine butter, sugar, flour and orange zest in a small bowl; mix until mixture resembles coarse crumbs. Sprinkle over batter. Place loaf pan on a cookie sheet.

Bake for 35-40 minutes or until wooden pick inserted din center comes out clean.

Cool the bread for 10 minutes and turn the loaf onto a cooling rack to cool completely.

To freeze the baked loaf, wrap the cooled load in heavy duty aluminum foil or place in a resealable freeze plastic bag. Can be frozen up to 3 months. Let stand at room temperature to thaw
