To make ahead, prepare mac and cheese, but don't top with crackers. Refrigerate, covered. Uncover, top with crackers and bake at 350 degrees for 30 minutes until hot.

Ingredients

  • 8 oz. macaroni
  • 6 cups golden or white cauliflower florets
  • 1/4 cup unsalted butter
  • 1/4 cup finely chopped onion
  • 1/4 cup all purpose flour
  • 3 cups whole milk
  • 3/4 tsp salt
  • 1/2 tsp freshly ground pepper
  • 10 oz. sharp cheddar cheese
  • 3/4 cup Goldfish crackers

Step 1

Bring a large pot of lightly salted water to a boil. Cook 8 oz macaroni according to pkg directions, adding 6 cups golden or white cauliflower florets during last 3 minutes. Drain and cover to keep warm. Meanwhile, in a medium saucepan, melt 1/4 cup unsalted butter over medium. Add 1/4 cup finely chopped onion; cook 3 minutes. Add 1/4 cup all-purpose flour; cook 1 minute. While whisking, add 3 cups whole milk, 3/4 tsp salt and 1/2 tsp freshly ground black pepper. Bring to a simmer and cook 1 minute. Remove from heat. Shred 10 oz sharp cheddar and whisk into milk mixture. Stir into macaroni and cauliflower. Grease a 13 x 9 x 2-inch baking dish and add macaroni and cheese. Crush 3/4 cup Goldfish crackers and scatter on top. Bake at 350 degrees for 20 minutes.
