Ingredients

  • 1 cup sugar
  • 1/4 cup butter, room temperature
  • 1 2/3 cups ripe bananas, mashed (about 3 bananas)
  • 1/4 cup skim milk
  • 1/4 cup greek yogurt
  • 2 large egg whites
  • 2 cups flour (substitute 1 cup for w/w flour)
  • 1 tsp baking soda
  • 1/2 tsp salt

Preparation

Step 1

preheat oven to 350 degrees. grease a 9 inch loaf pan.

combine sugar and butter in a bowl and beat until well blended. Add banana, milk, yogurt, and egg whites, beat well and set aside.

combine flour, baking soda and salt. stir well. Add dry ingredients to wet mixture, mixing until just combined.

Spoon batter into loaf pan. bake for 55 minutes or until cooked through. cover with foil if getting too browned.
