Cranberry White Chocolate Chip Oatmeal Cookies

If the Santa in your house wants something special this year, bake up some Cranberry White Chocolate Chip Oatmeal Cookies to leave out on Christmas Eve. They’re chewy, filled with texture and flavor, and they smell like cinnamon. All good things, in my opinion. And “Santa” will love them.

Ingredients
- 1/2 cup butter, softened
- 3/4 cup brown sugar, firmly packed
- 1/2 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 cups old fashioned oats
- 1 cup white chocolate chips
- 1 cup dried cranberries

Step 1
Preheat oven to 350 degrees.
In a large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
Add eggs and vanilla, and beat well.
In another bowl, combine flour, baking soda, cinnamon and salt. Add to wet ingredients and beat on low until combined.
Add oats, white chocolate chips and dried cranberries, and mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8-10 minutes or until light golden brown.
Cool, then remove to wire rack.
To get the fancy look with the white chocolate drizzle–which I wanted since I took these to a cookie swap–just melt some additional chocolate chips. Pour into a small zipper baggie and cut off the tip. Drizzle across the cooled cookies. The melted chocolate will harden quickly.
