Ingredients
- 1 Pie Crust
- 3 eggs, slightly beaten
- 1 cup light Karo syrup
- 2/3 cup baked dark brown sugar
- 1/3 cup butter melted
- 1 tsp espresso coffee powder
- 1 1/4 cups dry roaster salted mixed nuts, coarsely chopped
- 3 oz. sweet style Mexican chocolate or bittersweet chocolate, chopped

Step 1
Preheat oven to 350 degrees. Prepare pastry and transfer to 9 inch pie plate.
In a medium bowl whisk together eggs, corn syrup, brown sugar, butter and expresso powder until combined. Stir in nuts and chocolate.
Place pie plate on oven rack. Carefully pour filling into pastry shell. To prevent over-browning, cover edge of pie with foil. Bake 25 minutes; remove foil. Bake 20-25 minutes more or until a knife inserted near center comes out clean. Cool on a wire rack. Cover and chill within 2 hours. Serve with cinnamon ice cream.
