Ingredients
- Chicken:
- 1-1.5 lb chicken thighs OR thinly sliced chicken breasts OR full size chicken breasts sliced in half lengthwise
- Salt & pepper, to taste
- 2 TB olive oil
- 2 TB butter
- Mushroom Gravy:
- 2 TB butter
- 8 oz. sliced baby bella mushrooms
- 1 garlic clove, finely chopped or minced
- 1/4 cup flour
- 2 cups beef broth or stock

Preparation
Step 1
Chicken:
Heat oil & butter in a large skillet over medium-high heat. Add chicken & cook 3-4 minutes on each side until done. Transfer to a plate & cover loosely with foil.
Gravy:
Add 1 TB butter, if needed, to the skillet & add mushrooms. Cook for 3-5 minutes or until golden. Add remaining 1 TB butter & garlic. Cook for 1 minute until mushrooms are done. Reduce heat to medium. Add flour & stir for 1 minute. Stir in ¼ cup beef broth. Once incorporated, add remaining broth gradually, mixing constantly. Cook gravy for about 2 minutes or until it thickens. Season with salt & pepper. Return the chicken to the pan & turn to coat with gravy. Heat through for a couple minutes.
