- 3 eggs
- 2 cups sugar
- 3/4 cup butter, room temperature
- 1 tsp almond extract
- 2 cups flour, white
- 2 1/2 cups fresh or frozen cranberries (blueberries, partridgeberries)
- 2/3 cup chopped pecans or almonds

Step 1
Preheat oven to 350 degrees. Grease a 9x13 pan.
Beat eggs and sugar for 5 minutes. The mixture should almost double in size. The eggs act as the levening agent. Add butter and extract. Beat 2 minutes. Stir in flour. Gently stir in berries and nuts. Spoon into greased dish and bake 45 - 50 minutes. Let cool before cutting and serving. I like to serve this cake with a litle (or large) dollop of whip cream.
