Deep Fried Oysters

Often simple is best and this is a simple recipe that also works for other Shellfish such as Shrimp and Scallops. Donna and I usually just serve these with lemon and skip the tartar sauce or cocktail sauce.

Ingredients
- 2 quarts canola oil for deep frying
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 12 ounces shucked oysters, drained
- 2 eggs
- 1/2 cup fine soda cracker crumbs
- 1/2 cup panko

Preparation
Step 1
1. Heat deep fryer to 350 degrees F.
2. Put flour in small bowl.
3. Combine soda cracker crumbs and panko in another bowl.
4. Add salt and pepper to eggs to another bowl and beat slightly.
5. Dredge oysters in flour mixture.
6. Dip in egg mixture.
7. Then roll in bread crumbs.
8. Put coated oysters on baking sheet and let sit for 30 minutes.
9. Carefully slide oysters into hot oil.
10. Cook five at a time until golden brown, about 2 minutes.
11. Drain briefly on paper towels. Serve hot.
