Ingredients
- 1 pound baby peeled carrots
- juice from 1/2 orange
- 1 tablespoon honey
- 1/2 teaspoon freshly grated ginger
- orange zest from half of orange
- finely chopped parsley, for garnish

Preparation
Step 1
In a saucepan, cook the carrots in a small amount of boiling water, covered, until crisp-tender. Drain.
In a small bowl, combine the orange juice, honey, ginger and orange zest.
Pour over the warm carrots and toss to coat. Sprinkle with the parsley and serve.
