  • 3 boneless chicken breasts, diced
  • 2 C veggies; Carrots, peas, onions, sprouts, diced
  • 2 C rice
  • 2 Eggs
  • 1/4 C soy sauce
  • Exrta virgin olive oil
  • seasoning salt
  • pepper

Preparation

Step 1

Prepar, cook the rice and set aside covered to prevent sticking.

Put chicken in a bowl, add seasoning, mix to coat.

Heat oil in large skillet on med/high heat 2 min just until it starts to smoke. Add chicken, cook till sides are darkened Turn and let sit, continue until fully cooked.

Moe chicken to edges of pan. Add a little oil and veggies. Let sit for 1 min, start turning chicken and veggies together till veggies are heated through. Push all to outer edges of pan.

Add a little oil then eggs in center of pan. Scramble and chop into small pieces. Push all to outer edges of pan.

Add more oil and add rice. Turn everything together until cooked through.

Add soy sauce and continue turning until everything is coated, cook and turn 2 min longer to let soy sauce cook into all ingredients.
