Ingredients
- 1 ) head Cauliflower - roasted or 20 oz bag froz. Cauliflower
- 1 c. Chicken broth
- 8 oz Cream Cheese - softened
- 1 ) 10 oz can Rotel tomatoes
- 2 c. Chicken - cooked & diced
- 1/2 tsp mineral salt
- 1/2 tsp garlic powder
- 1/8 tsp black pepper
- 8 oz shredded Cheddar Cheese - mild or sharp
- Optional ingredients: bacon pieces &/or jalapeños

Preparation
Step 1
Preheat oven to 350 degrees
roast fresh Cauliflower florets - 375^ 30 minutes
While roasting cauliflower, put chicken broth & cream cheese in saucepan & heat on low til cheese is melted-whisk. Add tomatoes, chicken, salt, garlic, pepper - stir well. Add cheddar cheese and mix well.
Fold into a 13 x 9 baking dish and bake uncovered til creamy golden brown, approx 30-40 minutes.
Enjoy with a side salad.
