Ingredients
- 1 medium onion, chopped
- 2 medium carrots, thinly sliced
- 2 stalks celery, cut into 1/2-inch pieces
- 1 red bell pepper, seeded, cut into 1/2-inch pieces
- 1 medium zucchini, scrubbed, sliced into 1/2-inch rounds
- 2 cloves garlic, minced
- 2 (14 1/2 ounce) cans low-sodium beef broth
- 1 (28 ounce) can crushed tomatoes
- 2 (15 1/2 ounce) cans kidney beans, drained
- 2 tsp dried marjoram
- 1/4 tsp coarsely ground black pepper
- 1 1/2 cups cooked rice
