Ingredients

  • 1 medium onion, chopped
  • 2 medium carrots, thinly sliced
  • 2 stalks celery, cut into 1/2-inch pieces
  • 1 red bell pepper, seeded, cut into 1/2-inch pieces
  • 1 medium zucchini, scrubbed, sliced into 1/2-inch rounds
  • 2 cloves garlic, minced
  • 2 (14 1/2 ounce) cans low-sodium beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 2 (15 1/2 ounce) cans kidney beans, drained
  • 2 tsp dried marjoram
  • 1/4 tsp coarsely ground black pepper
  • 1 1/2 cups cooked rice
