Ingredients
- Dry Rub:
- 1 5 lb. pork loin
- 4 tbsp. olive oil
- 4 teaspoon onion powder
- 4 teaspoon paprika
- 4 teaspoon salt
- 2 teaspoon pepper
- 1 tsp ground cinnamon
- 1 teaspoon fresh grated nutmeg
- Apple Cinnamon Sauce:
- 4 sweet apples
- 2 tbsp. sugar
- 1 tsp cinnamon
- 1 tsp paprika
- 1 tsp salt
- 2 tbsp rice wine vinegar

Step 1
Begin by removing all of the membrane (silver skin) and excess fat from the outside of the pork loin. Rub the loin with olive oil, then lightly season it with dry rub mixture. After seasoning, wrap the loin in plastic wrap and refrigerate for at least one hour, preferably overnight. Smoke the loin (using apple wood) at 225 degrees Fahrenheit for two to three hours, or until the internal temperature reaches 145 degrees (155 for more well done). Remove to a platter, covering lightly with foil. Let it rest for fifteen minutes before slicing.
Apple Cinnamon Sauce
Finely chop apples and place in a saucepan. Add remainder of ingredients. Cover and bring to a boil over medium heat, then lower to a simmer. Cook gently until the apples are tender. Top sliced pork loin with sauce.
