This Apple Slab Pie with Crumb Topping features everything you love in the classic Apple Pie, but made in a sheet pan, which allows you to feed many, many more people. A pretty sweet deal, right? It also awards you a higher topping to filling ratio, which is something I am a fan of.

Ingredients

  • CRUMB TOPPING:
  • 1 box refrigerated pie crust
  • 9 C sliced apples (gala, golden delicious or granny smith)
  • 1/2 C sugar
  • 3 Tb flour
  • 2 tsp cinnamon
  • 2 Tb melted butter
  • 1 tsp vanilla
  • dash of salt
  • 1 C flour
  • 1/2 C sugar
  • dash salt
  • 1/4 C oats (quick cooking or old fashioned)
  • 1/2 C cold butter

Step 1

1. To form the crust, grab 1 box refrigerated pie crust. You'll definitely want to get the crusts that are rolled up, ready to shape, not the kind that come already formed in a pie tin.

2. Spray your counter with cooking spray and remove both of the pie crust rolls from the box.

3. Unroll each one and lay them on top of each other.

4. Grab your rolling-pin and roll the two crusts out together as thinly as possible. You are aiming for the shape of your sheet pan, here. Just try to get it as close as possible, allowing for an inch or two to fit over the sides of the pan. My pan is 11x17.

5. Spray your sheet pan with cooking spray and lay the crust out as evenly as you can over the top of it. Tuck the edges under and crimp then with your fingers.

6. Use a fork to prick the crust, about every inch or so.

7. Preheat your oven to 425 degrees.

8. Peel and slice 9 cups of apples. (Is used a combination of gala and golden delicious). Add to the apples 1/2 C sugar, 3 Tb flour, 2 tsp cinnamon, 2 Tb melted butter, 1 tsp vanilla and a dash of salt. Stir well to combine and pour out evenly over the crust.

9. To make the crumb topping, place 1 C flour, 1/2 C sugar, a dash of salt and 1/4 C oats (I used old-fashioned, but quick-cooking would work as well) into a medium sized mixing bowl.

10. Slice 1/2 C cold butter into small pieces and add it to the oat mixture. Use a pastry blender or fork to combine the ingredients together. When you have mixture that resembles small crumbs, you are good to go.

11. Sprinkle the mixture over the top of the apples and pat it down just a bit.

12. Bake for 35-40 minutes, or until the crust is golden brown. Cool for 45 minutes before serving.
