Wild Rice Stir-fry

In the fall, I always cook up a bunch of wild rice and freeze to have on hand for the season. Save even more time by buying already chopped onions, carrots and mushrooms.

Ingredients
- 3 tablespoons olive oil
- 3 teaspoons chopped garlic
- 1/4 cup diced yellow onion
- 6 ounces sliced mushrooms
- 1/2 cup julienned carrots
- 1 1/2 cups cooked wild rice
- 3/4 cup fresh pea pods, blanched and cut in half on the bias
- 1/3 cup sherry
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup sliced green onions

Preparation
Step 1
In a skillet, heat oil and sauté garlic and yellow onion over low to medium heat until translucent. Add mushrooms and carrots and continue stir-frying 5 to 8 minutes, then add wild rice and pea pods. Add sherry and cook a few minutes until it’s absorbed. Season with salt and pepper and top with green onions.
