Flour Tortillas

This recipe yields 24-30 tortillas. You can halve the recipe as well. If you halve the recipe, eyeball the Tablespoon measurements on the salt and baking powder

- 6 cups all purpose flour
- 1 Tbsp salt
- 1 Tbsp baking powder
- 1 cup shortening
- 2 1/2 cups Extremely hot water
- Comal for cooking tortillas

Step 1
1. Place all of the dry ingredients in a large bowl. Using your hand, mix dry ingredients well. Add the shortening. Work with your hands until the mixture becomes crumbly. Add the Extremely hot water and mix with a fork until you can touch with your hands. Continue to mix/knead the dough with your hands for 3 minutes or so. Form the dough into a ball.
2. Place the dough into a ziplock plastic bag and zip. Let the dough rest for 15-20 minutes or so. Get a large bowl out and dust it with flour on the bottom and up the sides.
3. Take out the dough and dust with flour on both sides. Roll out the dough into the shape of a tube. Use your hands to pull a piece of the dough. Roll into a ball and then shape into a pillow disc. Press the part of the dough where there is a dent, or separation. Form the pillow disc with your hands. Place the discs one by one into the large bowl with the flour.
4. Place extra flour in a small bowl. After you have all of your discs shaped and in the large bowl, place your comal on the stovetop on medium heat and heat it up before cooking.
5. For the next step, you will take each disc individually from the process of rolling the dough to cooking the tortilla. If you try to roll out all of the tortillas first, the dough will continue to proof and thicken and your tortillas will come out thick. Make one tortilla at a time.
6. Take a pillow/disc out of the bowl. on a lightly floured surface, roll out the dough into the shape of a round tortilla. Immediate place the tortilla on the hot comal. As the tortilla cooks, air bubbles will come up. Once there are a lot of bubbles and there are brown spots forming, flip the tortilla, press the air bubbles out with a spatula and let the other side cook until you see the brown spots. You can flip the tortilla 4-5 times to ensure a full cook, 1-2 minutes.
7. continue with all of the remaining discs/tortillas until all are cooked
