Ingredients

  • • 1lb boneless skinless chicken breast
  • • 1 TBS lemon juice
  • • 1 ½ TBS soy sauce
  • • 4 tsp cornstarch, divided
  • • ½ cup oj
  • • 1 ½ TBS brown sugar
  • • 2-4 tsp water, as desired
  • • 3 TBS peanut oil or veg oil, divided
  • • 1 tsp minced garlic
  • • 2 large peaches, cut into thin slices

Preparation

Step 1

1) Cut chicken into thin strips 1 ½ -2 inches long. Place the chicken in a bowl and add the lemon juice, soy sauce, and 33 tsp cornstarch. Marinate the chicken for 20 minutes.

2) In a small bowl, combine the oj with brown sugar

3) Ina separate bowl, dissolve 1 tsp cornstarch with either 2 or 4 tsps water (depending on how thick you want sauce.) Set aside.

4) Heat a wok or skillet over medium-high heat until it is nearly smoking and add 2 TBS oil. When oil is hot, add the garlic. Stir-fry for 1- seconds, then add chicken strips. Let them brown briefly, then stir-fry, stirring and tossing the chicken for 3-4 minutes, until the chicken turns white. Remove the chicken from the pan. Drain on paper towels.

5) Add 1 TBS oil to wok. When oil is hot, add ginger. Stir-fry for 10 seconds, then add the peaches. Stir-fry for 1 minute, then add the oj, stirring to dissolve the sugar.

6) Stir the cornstarch and water mixture and add it to the juice, stirring continually to thicken. When the sauce has thickened, add the chicken back to the pan. Sitr-fry for 1-2 minutes more to mix everything together. Serve hot.
